SITE ANALYSIS
We undertook a site analysis to inform our design, studying the existing materials and colour scheme to ensure our kiosk would be contextual and visually cohesive with its surroundings.

STEP 1
Whisk in the chipotle paste, garlic, spices, herbs, sugar, vinegar, lime juice, and some seasoning.
Mix in the beef, then cover and leave to marinate for 1-2 hrs, or chill overnight.
STEP 2
Heat the oven. Pour the stock in a casserole and bring to a simmer. Add the beef and simmer for 1 min, then cover and cook in the oven for 2 hrs.
Cook until the beef is tender enough to strip.
STEP 3
Bring the sauce to the boil and reduce. Meanwhile, roughly shred the beef.
Serve in the casserole dish with the tacos, coriander and toppings on the side for everyone to help themselves.

TACO BARBACOA
Understanding how the food served from the kiosk is prepared is crucial for grasping what is needed in the kitchen and how the processes relate to the kitchen's workflow.
DESIGN PROCESS
In designing this culinary kiosk, I utilized insights from my earlier site analysis and research on the history and culture of Taco Barbocoa to shape my design. I explored various spatial arrangements for the kiosk that not only optimized workflow but also enhanced the experience for customers and supported the business.

FINAL DESIGN
The final design draws inspiration from Mexican architecture and seeks to foster social interaction and business growth by creating a vibrant hexagon shaped plaza. This landmark space will encourage customers to gather and relax, capturing the attention of passersby and supporting the kiosk business. Since the original site lacked seating, this feature was essential to incorporate.
